"This newcomer to the Spa Country scene has the food to challenge the area's big players. For a start, it's in gorgeous surrounds, an iconic Art Deco hotel with more than a dash of Gatsby glamour. Chef Clinton Camilleri has a good pedigree, too, having worked at Blakes and Lake House. His food shows confidence and flair, backed by strong European techniques. Every dish has a little kick; the grilled swordfish salad is lifted with pomegranate molasses, quail strudel comes with fig compote and ratatouille timbale and a tomato stuffed with goat's cheese. Desserts are firmly continental, sticking to the soufflÉ, brulee, tart triumvirate, usually matched with fruity sorbets and gelati. The ambitions of the food are not quite matched by the accessible, mid priced wine list."
